The word lectithin was originally given by a French chemist and pharmacist. Lecithin is a generic term used to designate any group of yellow-brownish fatty substances occurring in animal, plant tissues and in egg yolk which is composed of phosphoric acid, choline, fatty acids, glycerol, glycolipids, triglycerides, and phospholipids (e.g., phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol).
Lecithin is present in a variety of biological matters such as venous blood, bile, human brain tissue, fish eggs, fish roe, chicken and sheep brain.
Soya Bean which is largely grown in Central India mainly surrounding areas of Indore, Madhya Pradesh is a major source of Soya Lecithin which can easily be extracted chemically or mechanically. Soya Lecithin is used for dispersing, wetting & emulsifier in Chocolate, Wafers, Dry Bakery products, Coca Powder, Milk Powder, and in Feed, Pharmaceuticals and Paint Industry for various applications.
